Primal, slightly wild and savage aromatically, with intense bright dark and red berry fruits and a bloody, ferrous meaty element brilliantly interacting from the plucking of the cork. It’s a little like pulling the pin from a hand grenade (I imagine). Appropriately explosive on the attack, intensely sapid and juicy, with waves of vibrant fresh-fruited energy building on the palate to a vivid crescendo – though one that finally brings an enveloping calm and tranquillity. Brilliantly dynamic and utterly hedonistic. This deserves time in the cellar, but it’s oh so tempting to pull the cork and enjoy it now.

Francisco Baettig, probably South America’s greatest winemaker, was previously responsible for making all the premium wines for Eduardo Chadwick and Errazuriz, including Sena, Don Maximiano, Vinedo Chadwick and Las Pizarras. Vinos Baettig is his new project. The Baettig wines are very small production Chardonnay and Pinot Noir from cooler climate Southern Chile region of Malleco. Baettig has been included among the Top 100 Wine Discoveries 2020 by Robert Parker’s Wine Advocate. “Francisco ‘Pancho’ Baettig is one of the finest winemakers in Chile and responsible for some of the best wines in the country. His own personal project focuses on Pinot Noir and Chardonnay from Malleco in the south, where his grandparents arrived from Switzerland.
